Ingredients for Kimchi (Korean Cabbage Relish) Recipe
1 Head Chinese cabbage
3 Garlic clove; minced
– cut into 1/2-in. strips
– (or less, if desired)
3 tb Salt
1/2 ts Crushed dried hot red chile
6 Green onions; chopped
1 ts Chopped gingerroot
– (or less, if desired)
Kimchi (Korean Cabbage Relish) Preparation
Soak cabbage in salted water to cover 5 to 10 hours. Drain. Combine cabbage with salt, green onions, garlic, chile and gingerroot. Mix well and spoon into large jar. i was stationed in korea in the erly 80’s
and there are two different ways to prepare
kimchee the best way,although it takes forever.
#1 is mix all the ingredients and add to a
clay pot or crockpot cover and seal.then bury
the pot in the ground about two feet deep for 2-3 months in the summer.this makes the kimchee fairly hot to taste.
#2 is do the samething but wait untill just before the ground freezes to bury the pot of kimchee.then when the ground thaws dig it up
and you will have some kimchee so hot you cant put it out .HOT HOT HOT………………..
