1lb crayfish tails & claw meat,1 clove Garlic,2 shallots,sml bunch of Dill,6 sml Anchovy fillets,pink peppercorns,Cajun seasoning,mayonaise,fine grated rind and juice of 1 lemon……………………Pan fry onions and garlic,crayfish meat add lemon juice while cooking leave to cool when all ingredients are cooked.when cold put in a blender with Dill,Anchovy fillets the ground pink pepper mix this with a little mayonaise put in a deep bowl then sprinkle cajun seasoning and grated lemon rind on the top.serve with fresh raw veg on a platter or with olive ciabatta.
