1 oz Butter or Vegetable oil
1 tb Oyster Juice
6 Fresh Oysters
1 tb White Wine
1 c Flour ( seasoned with salt
1 tb Shallots

tb Real Lemon Juice
Oysters Bingo (Fried Oysters) Preparation
Oysters Bingo from the Ships Cabin Seafood Restaurant in Norfolk, Virginia Lightly bread 6 oysters and saute on one side until golden brown, then saute the other side until same color appears. Remove oysters from pan. Turn off heat and add the wine, oyster juice, lemon juice, and shallots to the butter that the oysters were sauted in. This will make a creamy sauce to pour over the oysters.

This recipe was originally created by Joe Hoggard of the Ship‘s Cabin Restaurant for the infamous Bingo Stant.Just 4 things to add…do not bread the oysters but lightly dust them in flour.Have the bottom oyster shells in the oven to keep warm but not too hot to touch to put the golden brown, lightly fried oysters back into. Add chopped parsley to the sauce. And, of course, when you taste this awesome oyster recipe, say ’Bingo!‘.

This is indeed the original recipe that I was given by the chef at Ship’s Cabin Restaurant more than 26 years ago, and you’re right, do not bread the oysters, but lightly dust them in flour.
This has been a Christmas dinner appetizer for my family for years, and we love it! My husband actually found a pearl in one of his oysters one year and luckily did not break a tooth.
We are, in fact, having Oysters Bingo as our appetizer tonight for our Valentine’s Dinner — what a treat!
