1 teaspoon grated gingerroot
1/2 teaspoon sesame oil

2 cups diagonally sliced daikon
radishes (about

1 cup sliced mushrooms (about
3 ounces)
1/4 cup sliced green onions, (about

6 Bibb lettuce leaves
1 tablespoon sesame seed, toasted
Oriental Daikon Salad Preparation
Daikon radishes are long and mild, and are also called Japanese or Oriental radishes. Daikon is often pickled or shredded and used as a garnish. Here it’s sliced and combined with mushrooms and green onions in a tangy marinade.
Shake vinegar, vegetable oil, soy sauce, gingerroot, sesame oil and salt in tightly covered container. Pour over daikon, mushrooms and onions; toss until evenly coated. Cover and refrigerate about 2 hours or until chilled. Serve on lettuce leaves. Sprinkle with sesame seed. 6 servings
