Ingredients for Lentil Marinara over Pasta Recipe

1 Onion; chopped
2 Garlic cloves; crushed
2 Carrots; coarsely grated
2 Celery stalks; chopped
3 tb Olive
2/3 c Red lentils
1 cn Chopped tomatoes; (14 oz.)
2 tb Tomato paste
2 c Vegetable Broth
1 tb Fresh chopped marjoram; or
-1 teaspoon
Marjoram
Salt and Frontier ground
-black pepper

Lentil Marinara over Pasta Preparation

In a large saucepan, gently fry the onion, garlic, carrots and celery in the oil for about 5 minutes, until they are soft. Add the lentils, tomatoes, tomato paste, broth, marjoram and seasoning. Bring the mixture to a boil then partially cover with a lid and simmer for 20 minutes until thick and soft. Serve over pasta, and use the marinara sauce as required. Makes 6 servings.
