Ingredients for Lemon Vegetable Fish Supreme Recipe
1 lb Frozen cod, sole or other
-white fish
Juice of 1/2 lemon
1 md Tomato, diced
1 c Shredded unpeeled zucchini
Grated peel of 1/2 lemon
1/8 ts Salt
Few dashes tarragon
1 ds Each basil, pepper and thyme
1 tb Butter (opt.)
Lemon Vegetable Fish Supreme Preparation
With serrated knife, cut frozen fish into 4 serving size pieces. Arrange in Pam sprayed 8 square baking dish. Sprinkle with lemon juice. Cover with foil. Bake at 450 F. for 25 minutes or cover with plastic and Microwave on High for 6-7 minutes. Meanwhile combine tomato, zucchini, lemon peel and seasonings. Spoon over fish. Can dot with butter. Bake, covered for 8-10 minutes longer or Microwave for 5 mins. more.
