Ingredients for Lemon-Filled Cookies Recipe
3/4 c Softened butter
1/2 Sugar
1 Egg yolk; beaten
1 ts Vanilla
1 pn Salt
2 c Flour
Grated nuts for top
3/4 ts Orange rind
3 tb Softened butter
1-1/2 c Confectioner s sugar
1-1/2 tb Lemon juice
Lemon-Filled Cookies Preparation
Combine first 6 ingredients. Form in 4 small rolls and chill. Slice thin. Sprinkle with nuts. Bake at 400 about 7 minutes, until light brown. Combine rind, butter, sugar and juice. Place small amount between 2 cookies. Press together gently.
