Ingredients for Jo Beers Apricot Nut Bread Recipe
1 c Dried, chopped apricots
1 c Sugar
2 tb Shortening or oil
1 Egg, well beaten
1/4 c Sugar
1/2 c Orange juice
2 c Sifted flour
2 ts Baking powder
1/2 ts Soda
1 ts Salt
1 c Chopped nuts
Jo Beers Apricot Nut Bread Preparation
Soak dried apricots 20 min. Cream 1 cup sugar, shortening, and egg. Combine 1/4 cup sugar and orange juice and stir into above mixture. Add dry ingredients; blend well. Drain apricots, then stir with nuts into batter. Bake in greased and floured loaf pan (8”x 4 x 3 ) at 350 degrees for 65 minutes or until done. Can be frozen after baking.
