Ingredients for Jamaican Pepper Sauce Recipe
1 Ripe mango; peeled, pitted,
-and diced
2 Ripe large tomatoes; seeded
-and diced
1 Scotch Bonnet or Habanero
-chili [sic]; seeds and ribs
-removed and minced; or more
-to taste
1/2 c Golden raisins
4 Shallots; finely chopped
1 tb Minced peeled fresh ginger
2 ts Ground allspice
1/2 ts Salt
1/2 ts Ground cinnamon
1/4 ts Ground cloves
1/2 c (packed) dark brown sugar
1/2 c Granulated sugar
1/2 c Red wine vinegar

Cook, stirring occasionally, over low heat, until the sauce is thick and rich, about 1 hour. Cover and refrigerate for up to 2 weeks. Makes 2 cups.
