Ingredients for Hearty Oatmeal Bread 2 Recipe
3 c All-purpose flour,
-unbleached
1/4 c Whole wheat flour,
-stone-ground
1 tb Brown sugar
1 tb Butter
1 tb Yeast
1-1/2 ts Salt
1 c Oatmeal
1 c Hot water
1/3 c Warm water
Hearty Oatmeal Bread 2 Preparation
Pour 1 cup hot water over oatmeal. Set aside. Mix brown sugar into 1/3 cup warm water and add yeast to proof. When yeast has foamed & frothed to about twice the original volume, add to oatmeal mixture. Add remaining ingredients. Knead well. Let rise until doubled. Punch down shape into loaf and let rise again. Bake at 350 degrees F for 30 minutes. Makes 1 loaf. My mum and dad are also aetonvurdus these days, they add chopped, dried apricots and dates, plus almonds or walnuts. I don't like that combo but they think it's delicious.
