Ingredients for Hearty Halibut 2 Recipe

Vegetable oil spray
2 lb Halibut fillets
(or other firm fish steaks)
2/3 c Thinly sliced onion
1-1/2 c Sliced fresh mushrooms
1/3 c Chopped tomato
1/4 c Chopped green bell pepper
1/4 c Chopped fresh parsley
3 tb Chopped pimiento
1/2 c Dry white wine
2 tb Fresh lemon juice
1/4 ts Dill weed
Freshly ground black –
Pepper, to taste
8 Lemon wedges, for garnish

Hearty Halibut 2 Preparation

Preheat oven to 350 degrees. Lightly spray a covered baking dish with vegetable oil. Rinse fish and pat dry. Arrange onion slices in the bottom of prepared baking dish. Place fish on top. Set aside. In a bowl, combine remaining vegetables. Stir to mix well, and spread over fillets. In a small bowl, combine wine, lemon juice, dill, and black pepper. Pour over fish and vegetables. Cover and bake 25 to 30 minutes, or until fish flakes easily when tested with a fork. Garnish with lemon wedges. This recipe serves 8.
