-tips removed
2 c White wine vinegar
1/2 c Diced celery
2 Garlic cloves; sliced
2 ts Oregano
Salt and pepper to taste
1 c Olive oil; enough to cover

Funghi Marinati (Marinated Mushrooms) Preparation

Italian recipe from South Philadelphia In a saucepan, bring white wine vinegar to a boil. Add mushrooms and simmer 3-4 minutes. Drain, reserving 1 tablespoon vinegar. In a bowl, add celery, garlic, oregano, salt, pepper and mushrooms. Cover with oil plus the reserved tablespoon vinegar. Marinate overnight. Serving suggestion: these savory mushrooms can be served as a first course on a bed of crisp lettuce or as hors d’oeuvres with cocktail toothpicks.
