In measuring cup, stir together 1/4 cup water, peanut butter, soy sauce, vinegar and hot pepper flakes. Cut chicken into 1/2-inch cubes. in nonstick skillet, heat oil over medium-high heat; cook chicken, garlic and ginger, stirring, for 2-3 minutes or until chicken is no longer pink inside. Stir in peanut butter mixture and bring to boil; reduce heat to low and cook, stirring, for 3 minutes or until thickened.
