6 Jalapeno peppers
1/2 c Shredded fatfree Monterey
-Jack style cheese or
-fatfree cream cheese
3/4 c Bread crumbs
1/2 ts Salt
1 ct Fatfree egg replacer (like
-Eggbeaters) (2 eggs worth)
–and-
1 tb Water
-or-
1/2 c Soy milk

Wash and core the peppers, removing the seeds. Stuff with cheese of your choice. Mix the egg replacer with the water, or place the soy milk in a small bowl. Mix the salt and bread crumbs in a small bowl. Dip the peppers in egg/soy wash, then roll in bread crumbs to coat. Arrange the peppers on the baking sheet, and bake until the coating turns golden brown (about 5 – 8 minutes).
