Ingredients for Fat-Free Bran Muffins Recipe
1 c Bran buds or grape nuts
1 c Very hot water
1/2 c Applesauce
1-1/3 c Sugar
1/2 c Liquid egg substitute (e.g.
-Egg Beaters)
2 c FF buttermilk
2 c Flour
2-1/2 ts Baking soda
1 ts Salt
2 c All bran

The original recipe is at least 20 years old and came from a restaurant called The Village House in San Jose, Calif. Pour hot water over Bran Buds and set aside. Mix together applesauce, sugar, eggs and buttermilk. In a separate bowl, mix flour, soda and salt. Stir into wet ingredients. Add cooled Bran Buds and All Bran. Mix well. Spray muffin tins lightly with cooking oil spray. Fill tins 2/3 full. Bake at 400F for 15 minutes. Makes 2 dozen muffins. This makes a lot of muffins and can be easily cut in half. I always freeze them, then grab one on my way out of the house in the morning. I imagine prune puree could be substituted for the applesauce, but I’ve not tried that.
