Ingredients for Curried Couscous Recipe
1 tb Olive oil
1 Shallot — finely minced
1/4 c Green onion — finely
Chopped
1 c Couscous
1 c Chicken Stock — hot
1 ts Soy sauce
2 ts Unsalted butter
1 tb Curry powder
1/2 ts Sugar
Salt — to taste
Freshly ground pepper — to
Taste
Curried Couscous Preparation
In a medium size heavy saucepan, heat the olive oil. Add the shallot and green onion and cook until soft but not browned, about three minutes. Add the couscous and saute 1 to 2 minutes more. In a separate saucepan, combine the remaining ingredients and bring to a boil. Pour immediately over the sauteed couscous, remove from heat and let stand until the liquid has been absorbed and couscous is tender, 10 to 15 minutes. Serve hot. (if you are serving to children, leave out curry) You can add cooked chicken, or beef if you like. Shallots are a small garlic like vegetable.
