Ingredients for Curried Bean and Barley Soup Recipe

1 pk (12 oz) great northern
-beans, picked, washed, and
-soaked
2 lg Onions; chopped
1 Cloves garlic; chopped fine
-(up to 2)
1 cn (4 oz) green chilies;
-chopped
1 c Barley
1 ts Curry powder (up to 2)
Salt to taste

Curried Bean and Barley Soup Preparation

Cook beans in a dutch oven for 2-3 hours, until almost mush. Add remaining ingredients. Cook for 45-50 minutes, until the barley is cooked. I served this with fresh baked bread. The whole family loved it, even my picky 14 year old. I’m really glad I was too lazy to stir out of the house this morning.
