Ingredients for Crisp Squash-And-Pepper Toss Recipe

1/4 ts Dried whole basil
1/4 ts Dried whole oregano
1/4 ts Dried whole thyme
1/2 ts Salt
1/4 ts Pepper
1 tb Red wine vinegar
2 tb Water
2 lb Yellow squash; cut into 1/2
-inch strips
1 lg Onion; chopped
1 cl Garlic; minced
1 Sweet red pepper; cut into
-1/2-inch strips
2 tb Olive oil
1/4 lb Kielbasa (Polish sausage)
-cut into 1/4-inch slices

Crisp Squash-And-Pepper Toss Preparation

Combine basil, oregano, thyme, salt, pepper, vinegar, and water in a shallow 2-1/2 quart casserole dish; add squash. Cover with heavy-duty plastic wrap; microwave at HIGH for 3 to 4 minutes. Let stand, covered, for 3 to 4 minutes. Add onion, garlic, sweet red pepper, and olive oil; toss gently. Cover and microwave at HIGH for 2 to 4 minutes. Add sausage, and toss gently; cover and microwave at HIGH for 1 to 2 minutes.
