I love it :>
its really nice if you fry it on a hot griddle for 2 minutes either side (so you get nice marks on it). then if you put it under a grill for a minute or two because it goes crispy on the outside and soft in the middle. and serve it with unsalted butter mixed with honey.

I am very pleased to find this recipe…which I can recall enjoying as a child (in Ireland). My Mother used to make it….but in my hazy recollection I thought she called it ‘Manx Toast’. I will try it out on my Daughter when she comes visiting.
