Ingredients for Caramel Icing #1 Recipe

2-1/2 c Sugar
1 Egg; slightly beaten
1 Stick butter
3/4 c Evaporated milk
1 ts Vanilla

Caramel Icing #1 Preparation

Heat milk and 2 cups sugar with butter. Cool slightly and add beaten egg. Melt 1/2 cup sugar in iron skillet slowly until brown and runny. Turn heat to medium on first mixture; add browned sugar and cook 10 minutes. Remove from heat; cool slightly and add vanilla. Beat to desired consistency for spreading over cake, adding a bit of cream if mixture becomes too thick.
