Ingredients for Beets with Dill and Feta Recipe
1 bn Beets (4-5)
1/4 c Feta cheese (I like more)
1/2 A lemon ; juice of
Olive oil
Fresh dill – chopped
Beets with Dill and Feta Preparation
1. Cook the beets in boiling water until just tender (not mushy) 2. Remove skins and cut into small cubes. 3. Place in a bow, drizzle with olive oil (not too much), lemon juice and dill to taste; toss. 4. Sprinkle with crumbled feta cheese and serve.
