Ingredients for Banana Pecan Muffins 2 Recipe
1-1/2 c Flour
1-1/2 ts Baking SODA
3/4 c Raw sugar
3-1/2 oz Butter
1 Egg
1-1/2 ts Baking POWDER
1-1/2 c Bran
1/2 c Chopped pecans or walnuts
2 Very ripe bananas
1/2 c Milk
1/2 c Plain yogurt
Banana Pecan Muffins 2 Preparation
Sift flour, b/pd., b/soda into a bowl. Stir in bran, sugar & nuts. Make a well in center of dry ingredients. Melt butter in a small pot or microwave. Mash bananas. Lightly beat egg, milk & yogurt together. Add bananas to dry ingredients. Pour melted butter & egg mixture into the well & mix with a fork until JUST combined.
