Ingredients for Apple Cream Scones Recipe

2 c Chopped tart apple
6 tb Butter
1 tb Instant coffee crystals
1 ts Hot water
1/2 c Whipping cream
2-1/4 c All purpose flour
1/3 c Sugar
1 tb Baking powder
1/4 ts Salt
2 tb Coarse sugar

Apple Cream Scones Preparation

Cook apple in 2 tbsp butter till tender and liquid is almost evaporated, stirring often; cool slightly. Dissolve coffee in water; stir in cream. Mix flour, 1/3 cup sugar, baking powder and salt; cut in remaining butter til pieces resemble coarse crumbs. Add apples and coffee mixture; stir just till dough clings together. On a lightly floured surface, knead 6 times. On an ungreased baking sheet pat dough into an 8 circle. Top with coarse sugar. Cut into 12 wedges; separate slightly.
