Ingredients for 5-Bean Soup Recipe

2 tb EDEN Extra Virgin Olive Oil
4 Cloves garlic; minced
1 md Onion; diced
3 Celery stalks; diced
2 Carrots; diced
1 md Potato; diced
1/4 c Barley
4 c Water
1 Bay leaf
15 oz Can EDEN Pinto Beans
15 oz Can EDEN Black Beans
Can EDEN Kidney Beans
Can EDEN Navy Beans
Can EDEN Aduki Beans
1 c Corn, fresh or frozen
2 c EDEN Spaghetti Sauce
1/4 c EDEN Shoyu
– (or more, to taste)
1 ts Dried oregano
1 ts Dried basil

5-Bean Soup Preparation

Heat oil and saute garlic and onion until onion is translucent. Add celery, carrots, potato, barley and water. Simmer 30 minutes. Add beans, corn, spaghetti sauce, shoyu, and herbs. Simmer 5-10 minutes. Serve. Great the next day!
